Ingredients

  • 1 1/2 cups (340g) low-fat cottage cheese
  • 6 ounces (170g) whipped cream cheese
  • 1 scoop (30g) vanilla protein powder
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract and the zest of half a lemon
  • 2 cups strawberries, halved
  • 4 graham cracker sheets, crushed

Instructions

    Blend the cottage cheese for 45 seconds until completely smooth, then add the cream cheese, protein powder, maple syrup, vanilla, and lemon zest and blend again.

    Simmer the strawberries in a small pan for 5 minutes, mashing lightly, until they thicken into a loose compote. Cool 10 minutes.

    Spoon the crushed grahams into the bottom of four jars and press lightly.

    Layer in the cheesecake filling, then the compote.

    Chill at least 2 hours before serving so the filling sets.
